One day I read an article by Tulio Zuluaga that aroused my curiosity, “The TOUR of the perfect Hamburgerologist? 6 Spectacular BURGERS in Colombia”; Just the title made me want to discover all those new flavors put into a simple hamburger and see if they make them exquisite.

Taking advantage of the fact that I am in Cali, I wanted to solve my curiosity with one of those 6 best hamburgers that Tulio recommends, La Doble R Azul. It is a hamburger that comes with caracha tenderloin with horseradish, caramelized onions, blue cheese, and two ingredients that I assure you that you will not find in other hamburgers; radish and rosemary. It sounds different, and it is a bit scary to imagine that combination but at the same time, it is interesting to know what its flavor will be.

It was then that Maria Claudia Zarama, the chef of La Sanduchería del Escudo, told me the story of her hamburger and why it is delicious.

María Claudia, in addition to being the Chef of La Sanduchería del Escudo, is also the Chef of the Shield of Don Quixote. The story began when she had just opened the sandwich shop, in the other restaurant she made a special dish for an exclusive customer who was visiting him, the dish had something of what the hamburger now has, then both the customer and she realized that the dish it was delicious and it was then that he thought such a perfect dish was not to be missed. She then decided to improve it, make some tweaks and turn it into a hamburger for the sandwich shop.

But the success of her hamburger is attributed not only to the combination of ingredients to generate the flavors that she "whispers" in her head but also to the quality of its ingredients; most are organic and very well selected. The hamburger meat is 125 grams of caracha loin and is ground by itself to guarantee its purity, the artisan bread is made with milk and butter from exclusive farms and is divided by hand in their kitchen, respecting the slow rest so that the flour does its job with its flavor, the blue cheese is handmade from a local supplier that guarantees its quality (they like to work with local suppliers) and their sauces are authentic from the house produced in their "laboratory" the Shield of Quixote.

All that affection from the chef in the details of her product make the Double R Azul one of the best hamburgers in Colombia and one that you should try in Cali. Do not be fooled by its size since it is not a wide burger, it is a tall burger with the same 125 grams as any other, but this means that its meat is not "slaughtered" in the pan and does not become a four-quart .

Thanks to the Chef for receiving me, I left La Sanducheria del Escudo with joy, I recovered my love for the hamburger and with greater curiosity to know more exquisite hamburgers, do not be surprised if very soon I also start with a gastronomic route of hamburgers.
